The holidays are just around the corner, and West Kentucky Community and Technical College is offering classes on how to make the season a bit sweeter.
Miranda Turner, WKCTC Workforce Solutions culinary training coordinator, will teach participants to make holiday appetizers and quick food gift ideas that are sure to please family and friends. Miranda’s Meals, a three-week cooking series, will be on November 11, November 18 and December 9 from 6 - 9 p.m. in the Anderson Technical Building, room 159. A maximum of 12 people can sign up for each class; early registration is encouraged. The cost is $40 per class.
- November 11 – Healthy Holiday Appetizers
Participants can nibble on puff pastry Parmesan Pepper Twists as they prepare a Turkey Reuben Dip. With a twist on the flavors of the classic sandwich, the extra calories won’t be missed! Simple substitutions will make our Oven-Baked Crab Cakes and Lemon Aioli a sure-fire crowd pleaser! Next, students will prepare a Fruited Cheddar Roll made with apricots, dates, and golden raisins and coated in heart-healthy almonds. The night will conclude with learning to make Greek Salad Kabobs drizzled with a tangy Greek dressing. - November 18 – Help, I Need a Christmas Gift!
It never fails that people are scrambling around for last-minute gifts during the holiday season. In this session, participants are going to create some quick cookies and savory spiced nuts that won’t break the bank and will save some precious time! The evening’s recipe will be Apple Cobbler Cookies, rolled in a delicious crumb coating. Learn to make great Dutch Spice Cookies that can be made ahead of time and frozen for those last-minute gifts. Cranberry Chocolate Chip Cookies and Quick Caramel Pecan Turtle Cookies make a cozy gift alongside a mug and some hot cocoa! Participants will also get to snack on some Rosemary Almonds and Spiced Cashews as they prepare Sugar & Spice Walnuts. No one has to know these tasty treats don’t require sweating over a hot stove. - December 9 – Quick and Easy Appetizers
“Quick” and “easy” are two words that can’t hear enough in the hectic holiday season. In this session, students will enjoy Chili Cheese Twists as they learn to prepare Cranberry Glazed Meatballs, a party favorite with a healthy twist. Mushroom Bacon Pinwheels and Turkey Spinach Pinwheels are next on the menu. These make a scrumptious addition to any buffet table and can be prepared in less than twenty minutes! Learn to make a spicy, sweet Apricot Chipotle Spread that adds the right amount of kick to your next get-together and a Roasted Eggplant Dip with Spiced Pita Crisps!
